Apple cider vinegar, otherwise known simply as cider vinegar, is a type of vinegar made from cider or apple-must and has a pale to medium amber color. Apple cider vinegar is made by crushing apples and squeezing out the liquid. Yeast is added to the liquid to start the alcoholic fermentation process, which turns the sugars into alcohol. In a second fermentation process, the alcohol is converted by acetic acid-forming bacteria (acetobacter) into vinegar. Acetic acid and malic acid give vinegar its sour taste. Unpasteurized or organic apple cider vinegar may have a cobwebbed, congealed appearance. This is natural, formed during the acetification process. This substance is often called "mother of vinegar" which is actually detritus from the bacterial colony. It may be sold unfiltered and unpasteurized with the mother of vinegar present, as a natural product. It is very popular, partly due to beneficial health and beauty properties. Not all of these benefits have been verified though.

Apple Cider Vinegar contains polyphenols, acetic acid, lactic, malic, and citric acids. Apple cider vinegar has small amounts of vitamin C, vitamin E, vitamin A, vitamin B1, B2 and B6. Minerals include manganese, iron, calcium, sodium, magnesium, sulpher, copper, phosphorus, silicon, chlorine and fluorine.

Apple cider vinegar products are advertised in the popular press and over the Internet for treatment of a variety of conditions or various health benefits, such as weight loss, acne treatment, arthritis treatment, skin health benefit, hair health benefit, cholesterol lowering, blood pressure lowering, candida and yeast infections treatment, and many other conditions. However we are not able to find any human research regarding the health benefit of apple cider vinegar. Even though there has not been much human research, it is possible that apple cider vinegar has health benefits that we are not aware of yet.

Safety

Apple Cider Vinegar Extract is safe, but due to its acidity, apple cider vinegar may be very harsh, even burning to the throat. When taken as a supplement, there may be side effects such as irritability, nervousness, and palpitations; other side effects may occur, and theoretically it may interact with certain medicines. Some users have had problems similar to those attributed to pharmaceutical drugs such as Fosamax. There has been one report of a woman who received acid chemical burns of the throat when using the pill form.
